      Yonan’s primer on beans is an A-to-Z guide to making this versatile and environmentally friendly food the basis for a healthful and flavorful diet. Food and dining editor of The Washington Post—where he also writes the “Weeknight Vegetarian” column—and author of the acclaimed of Eat Your Vegetables, Yonan features 125 recipes inspired by the culinary traditions of the Middle East, the Mediterranean, South America, and the American South. These range from Harissa-Roasted Carrot and White Bean Dip to Crunchy Spiced Chickpeas to Smoky Black Bean and Plantain Chili, and he provides options for all meals plus snacks, soups, and desserts. He also offers tips on cooking different kinds of beans—chickpeas, lentils, pulses, and more—in different kinds of appliances and tops it all off with beautiful photos throughout.
